final edit: look into tailscale possibly for your VPN, its easier to do the routing so that only traffic to your LAN goes through that and they will use their own bandwidth for open internet.

I think Pokémon go was bought by Saudi Arabia or something like that, and that made me wary. what is your plan for protecting and anonimizing this data, and are you planning to sell it to third parties?
